Crustless Pumpkin Pie

3/4 cup brown sugar*
3 Tablespoons butter, softened
2 eggs
1 can [15oz] pumpkin puree
1 can [12oz] evaporated milk**
2 teaspoons vanilla

1/2 cup flour
3/4 teaspoon baking powder
1/8 teaspoon salt
3 teaspoons pumpkin pie spice***

Preheat oven to 350 degrees. Grease a deep dish 9 inch pie pan.

Whisk together the sugar, butter and eggs. Add the pumpkin, milk, vanilla, and mix.

Measure the flour, then add the rest of the dry ingredients to it, and stir. Add the dry to the wet and mix till smooth.

Pour into prepared pan. Bake 50-55 minutes, or until center is set.

*Original recipe called for granulated sugar, but I think brown sugar is much much better.

**I have used regular vitamin D milk in this and it worked fine.

***Pumpkin Pie Spice can be made with:
1 teaspoon cinnamon
1 teaspoon allspice
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
