Lemony Ginger Cake

CAKE
1 1/4 C flour
1/2 C brown sugar
1/2 C sugar
1 1/2 t baking powder
1 t ground ginger
grated peel of 1 lemon
1/4 C sour cream
1/4 C milk
1 egg
1/4 C butter, melted

GLAZE
3/4 C powdered sugar
1-2 T lemon juice
1 T melted butter

Preheat oven to 375 degrees. Mix all the dry ingredients in an 8″x8″ pan. Mix together the sour cream, milk, egg, and lemon peel in a bowl. Make 2 wells in the dry mix in the pan and our the milk mixture in one well and the melted butter in the other. Mix well, it will be thick and sticky. Spread evenly. Bake for 20-25 min. Let cool.

Mix glaze together and pour over the top. The glaze will harden up as it cools. The cake sticks a bit, but will come out just fine if you loosen the edges first. If this bugs you, just mix it all in a bowl first and grease the pan, but you don’t have to, because this is a lazy cake. So just be lazy and mix it in the pan.
